Mushroom Saute With Goat Cheese Crostini

Ingredients:

Directions:

  1. Place sun-dried tomatoes in small bowl.
  2. Pour boiling water over tomatoes; let soak until soft, about 20 minutes.
  3. Drain tomatoes; slice thinly.
  4. Set aside.
  5. Melt 4 tablespoons butter in heavy large skillet over medium heat.
  6. Add garlic, dried red pepper and thyme; saute 1 minute.
  7. Increase heat to medium-high.
  8. Add shiitake and button mushrooms and saute until brown, about 10 minutes.
  9. Add wine and lemon juice and simmer 2 minutes.
  10. Mix in sun-dried tomatoes and artichokes.
  11. (Can be prepared 2 hours ahead. Let stand at room temperature. Rewarm over medium heat before continuing.)
  12. Mix in basil and 2 tablespoons butter.
  13. Season to taste with salt and pepper.
  14. Transfer to bowl; sprinkle with chopped parsley.
  15. Preheat oven to 375°F
  16. Arrange baguette slices in single layer on baking sheet.
  17. Bake until golden, about 8 minutes.
  18. Remove from oven; maintain oven temperature.
  19. Brush each baguette slice with butter and sprinkle with Parmesan cheese.
  20. Return to oven; bake until cheese begins to melt, about 5 minutes.
  21. Serve warm crostini with goat cheese and mushroom mixture.
