Ingredients:

Directions:

  1. In a blender,combine vinegar,mustard,honey,1/4tsp salt and some fresh ground pepper. Cover and blend 30 seconds. With the blender runningslowly,add oil in a thin,steady stream(if necessary,atop blender and scrape down sides).
  2. In a salad bowl,combine greens,mango goat cheese and cranberries. Add mint sprigs,to likin;drizzle with dressing. Toss gently to coat. Season,to taste,with salt and pepper
