Miss Bonnie's Salmon Crouquettes

Ingredients:

  • 1 (16 oz) can pink salmon
  • 1 egg
  • 1 tsp salt
  • 1 tsp pepper
  • 1 small onion, diced
  • 1 1/2 cups peanut oil

Directions:

  1. Mix everything but the half cup of crackers and oil.
  2. Heat oil in a skillet.
  3. Form into four thick patties.
  4. Roll in remaining cracker crumbs.
  5. Fry lightly in oil about 3 minutes on each side.
