Mini Pumpkin Cupcakes

Ingredients:

  • 2 eggs
  • 1 cup sugar
  • 1/2 cup oil
  • 7 oz pumpkin
  • 1 cup flour
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 4 tbsp butter
  • 1/2 tsp vanilla

Directions:

  1. Preheat oven to 350
  2. Mix together flour, baking soda, baking powder, salt, and cinnamon
  3. In separate dish, mix together eggs, sugar, and oil.
  4. Add in pumpkin and mix well.
  5. Slowly add in flour mixture and mix
  6. Pour into 12 regular sized, or 24 mini sized cupcake pan
  7. For mini cupcakes I baked them about 15 minutes
  8. Mix together cream cheese, butter, and vanilla until creamy. Stir in powdered sugar. Use to pipe or frost cupcakes
