Ingredients:

  • 1 package (2 layer size) chocolate cake mix
  • 1 package cream cheese, softened (8 oz; 250 g)
  • 1 egg
  • 2 tbsp sugar (30 ml)
  • 48 mini bite size oreo cookies
  • 1 - 1 1/2 cup icing , or whipped cream

Directions:

  1. Prepare batter as directed on package.
  2. Set aside.
  3. Beat cream cheese , egg and sugar until well blended.
  4. Spoon batter into muffin cups or muffin pan, filling each cup about half full.
  5. Top each with about 1- 11/2 tsp of the cream cheese.
  6. Put a cookie on top.
  7. Cover evenly with the remaining cake batter.
  8. Bake at 350 deg F (160 deg C) for 19 t0 22 minutes.
  9. Cool 5 minutes.
  10. Remove from pans to wire racks.
  11. Cool completely.
  12. Top cupcakes with icing or cream and remaining cookies.
  13. Serve
