Ingredients:

  • 3 tbsp butter
  • 1/4 cup flour
  • salt and pepper
  • 1/4 tsp nutmeg
  • 1 1/2 cups milk
  • 2 1/2 lbs haddock, skinned and boned
  • 1/4 cup sherry wine (optional)

Directions:

  1. To make the white sauce, melt the butter in a pan and stir in the flour and spices until smooth.
  2. Gradually stir in the milk.
  3. Cook until smooth and thick.
  4. Add the cheese; stir until melted.
  5. Place the haddock in a greased baking dish.
  6. Sprinkle with salt and pepper.
  7. Pour the sauce over the haddock.
  8. Add the sherry and sprinkle liberally with the paprika.
  9. Bake in a 325 degree oven for 45 minutes.
