Meatloaf Comfort Roll-Up With Creamy Sauce

Ingredients:

Directions:

  1. Combine meat, crumbs, egg and salt and mix well.
  2. On wax paper or parchment paper, pat meat mixture evenly to a rectangle about 12 x 14 .
  3. Combine mashed potatoes, finely chopped hard-boiled eggs, salad dressing, parmesan cheese, celery and green onion.
  4. Mix and season with salt and pepper.
  5. Spread potato mixture evenly over meat and roll up jelly roll fashion, starting with the narrow end.
  6. Chill several hours or overnight in fridge.
  7. Slice the roll in 10 slices, approximately 1 1/4 for each slice.
  8. Lay meatloaf slices on a cookie sheet sprayed with Pam or lined with parchment paper.
  9. Bake at 350 - 25 to 30 minutes.
  10. Mix sauce ingredients together and heat over low temperature.
  11. Pour over meatloaf and a side dish of veggies and enjoy!
