Ingredients:

Directions:

  1. Heat olive oil in pan.
  2. Saute zucchini 4-5 minutes until lightly browned.
  3. Transfer to bowl and add half of the mint, garlic and red wine vinegar. Season to taste and stand 5 minutes.
  4. Just before serving, stir through remaining mint.
