Lupe's Italian Bread and Tomato Salad

Ingredients:

Directions:

  1. Place bread in a single layer on a baking sheet.
  2. Toast in 300 degree oven until golden brown, approximately 15 minutes.
  3. Stir cubes frequently for even browning.
  4. Remove and let cool.
  5. Gently toss cucumbers, tomatoes, cucumbers, onions, basil, olives and garlic together in a large bowl.
  6. Sprinle vinegar over mixture.
  7. Next, drizzle olive oil over it.
  8. Sprinkle with salt and pepper toss gently to combine flavors.
  9. Let salad stand at room temperature for 30 minutes or until bread softens slightly.
  10. Serve immediately on a bed of mixed greens.
