Ingredients:

  • 2 eggs
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 2 tbsp ricotta cheese (whatever you have on hand, i've used all with success) or 2 tbsp fat-free cottage cheese (whatever you have on hand, i've used all with success) or 2 tbsp cream cheese (whatever you have on hand, i've used all with success)

Directions:

  1. Blend all in blender, cook on skillet/fry pan as you would pancakes. Top w/Smart Balance Spread and Sugar-Free Syrup.
