Ingredients:

  • oatmeal has all kinds of good soluble fiber in it and my mother''s grandmother at a bowl of it every day and lived to almost 100
  • i was buying vanilla soy milk from costco or sam''s club all the time in environmentally ' happy' non-refrigerated paper cartons. the soy thing is something that you either like or don''tsp like, but if you don''tsp have soy milk or don''tsp like it-just substitute milk here.
  • 1/4 tsp salt
  • 2 cups rolled oats
  • 1/3 cup raisins
  • 1/3 cup chopped walnuts , almonds or any other nut you might like. i used thin sliced almonds which blended nicely with the coconut.
  • 1 (8 oz) container plain yogurt
  • 3 tbsp honey

Directions:

  1. Pour the milk and salt into a saucepan, and bring to a boil. Stir in the oats, maple syrup, raisins, and cranberries. Return to a boil, then reduce heat to medium. Cook for 5 minutes. Stir in walnuts and coconut, and let stand until it reaches your desired thickness. Spoon into serving bowls, and top with yogurt and honey, if desired.
  2. Yield: 6 servings
