Healthy Coconut Almond Oatmeal

I have a bad habit of not eating breakfast in the morning and this one just looks so good it makes me look forward to breakfast!!
Ingredients:
oatmeal has all kinds of good soluble fiber in it and my mother’s grandmother at a bowl of it every day and lived to almost 100
i was buying vanilla soy milk from costco or sam’s club all the time in environmentally “happy” non-refrigerated paper cartons. the soy thing is something that you either like or don’t like, but if you don’t have soy milk or don’t like it-just substitute milk here.
3 1/2 cups plain or vanilla soy milk
1/4 teaspoon salt
2 cups rolled oats
1/4 cup pure maple syrup
1/3 cup raisins
1/3 cup dried cranberries
1/3 cup sweetened flaked coconut
1/3 cup chopped walnuts, almonds or any other nut you might like. i used thin sliced almonds which blended nicely with the coconut.
1 (8 ounce) container plain yogurt or any flavored yogurt of your choice
3 tablespoons honey
Directions:
1. Pour the milk and salt into a saucepan, and bring to a boil. Stir in the oats, maple syrup, raisins, and cranberries. Return to a boil, then reduce heat to medium. Cook for 5 minutes. Stir in walnuts and coconut, and let stand until it reaches your desired thickness. Spoon into serving bowls, and top with yogurt and honey, if desired.
2. Yield: 6 servings
