Ham and Cheese Stuffed Baked Potatoes

Ingredients:

Directions:

  1. Cut potatoes in half lengthwise; scoop out pulp and put pulp in a large bowl.
  2. Put pulp and shells aside.
  3. Over medium-high heat, melt butter in a skillet.
  4. Sauté ham, onion, and garlic until onion is tender.
  5. With a fork or potato masher, mash potato pulp.
  6. Add in ham mixture, sour cream, salt and pepper to taste; stir to mix.
  7. Stuff shells with potato mixture.
  8. Sprinkle with Parmesan cheese.
  9. Place potatoes in a 13x9 inch baking dish.
  10. Bake at 350°F for 25-30 minutes.
