Ingredients:

Directions:

  1. Heat 2 tablespoons of the butter in a large heavy skillet.
  2. (Make sure the skillet will fit under the broiler, because the last step of the recipe is to melt the cheese over the top of the frittata.)
  3. Add the zucchini and cook until soft and lightly browned.
  4. Remove the zucchini with a slotted spoon and set aside to cool.
  5. Add the onion and garlic to the pan and cook, stirring occasionally, until softened and translucent.
  6. Remove with a slotted spoon and set aside.
  7. Beat the eggs in a large mixing bowl until well blended.
  8. Add the cooled zucchini, the onion mixture, the salt, pepper, and herbs and mix well.
  9. Wipe the skillet with a paper towel.
  10. Add the remaining tablespoon of butter and melt, tilting the skillet so that the bottom is evenly coated.
  11. When the butter foams, pour the egg mixture into the pan and cook over low heat until the eggs are almost set on top.
  12. Meanwhile, heat the broiler.
  13. Sprinkle the cheese on top of the frittata and place the skillet under th ebroiler.
  14. Cook until the cheese has melted, about 2 minutes.
  15. Serve at once.
