Habanero Hot Sauce

Ingredients:

Directions:

  1. In large skillet, saute onion and garlic in oil until soft.
  2. Add carrots and water and bring to a boil.
  3. Reduce heat and simmer until carrots are soft.
  4. Remove from heat and transfer to a blender or food processor.
  5. Add the chiles, lime juice, vinegar and salt.
  6. Puree until smooth.
  7. Serve at room temperature or chilled.
  8. (I've had this last six months in the refrigerator.).
