Grilled Corn Kabobs

Ingredients:

  • 1 small onion
  • 1 large clove of garlic, crushed
  • pinch salt and pepper
  • metal skewers & aluminum foil
  • any vegetables that you have on hand can be used in these skewars

Directions:

  1. Peal corn on the cob removing the silk and keeping the husks attached
  2. Cut the cob off, leaving a small piece at the base
  3. Soak husks in a bowl of water
  4. Chop the cobs of corn into 1-2 segments
  5. Cut Summer squash and onion into 1-2 segments
  6. Mix butter, chives, garlic, salt and pepper in med. bowl
  7. Add vegetables to butter mixtures and mix to coat
  8. Assemble skewers starting with the corn base and ending with the tip of cob, alternating with other vegetables.
  9. Wrap the husks back around the skewer and wrap in foil
  10. Cook over the grill for about 15 minutes
  11. Remove foil and cook another 5 minutes
