Garlic And Goats Cheese Mashed Potatoes

Ingredients:

  • 3 cloves garlic , smashed
  • 3 oz goat's cheese
  • 2 tbsp butter
  • 2/3 cup buttermilk
  • salt and pepper to taste

Directions:

  1. Peel and cube the potatoes and put in a pan, covering them with water.
  2. Add smashed garlic cloves
  3. Add salt to water and bring to a boil.
  4. Boil for approx 10-15 minutes, or until soft
  5. In another pan, add butter and allow to melt and brown slightly (adds a nice nutty flavor)
  6. Add buttermilk and warm on medium heat. Do not allow to boil, and do not over cook as it will curdle.
  7. When potatoes are done, mash while stirring in goats cheese and buttermilk/butter mixture, until you reach desired consistency.
  8. Add pepper to taste
  9. Serve hot!
