Ingredients:

Directions:

  1. In lg skillet, cook and stir onion and green pepper in butter for 2 minutes.
  2. Add zucchini, tomato, oregano and pepper.
  3. Cook and stir for 6 minutes.
  4. Set aside.
  5. In bowl, beat egg whites, water, cream of tartar, and salt.
  6. Beat until stiff peaks form.
  7. Put the egg substitute in a lg bowl; fold in the whites.
  8. Place in a 10 inch ovenproof skillet coated with cooking spray.
  9. Cook over med heat for 5 minutes.
  10. Then bake at 350* for 10 minutes, until done.
  11. Spoon vegetable mixture over top.
  12. Sprinkle with cheese.
  13. Bake another 5 minutes, until cheese melts.
