Directions:

  1. Peal onion and cut into 1/2 inch pieces. Peel and finely chop garlic. wash celery and cut into 1/4 inch pieces.
  2. Heat the oil in a large pot over medium heat. add the onion, garlic, celery and cook about 5 min, until veggies soften. add tomatoes and their liquied, oregano, pepper, lentils, chicken broth.
  3. Bring to a boil over high heat. then turn heat to los and cook covered for 20 min. Test lentils to see if they are soft. If too hard cook for 5 or 10 more minutes.
