Fish in Pineapple-Lime Sauce

Ingredients:

Directions:

  1. Heat pineapple and lime juices to a simmer in a large non-stick skillet over medium heat.
  2. Add fillets and poach 1 minute.
  3. Carefully turn fish over.
  4. Cover and simmer 5 to 7 minutes.
  5. Transfer fish to a large plate and cover to keep warm; reserve juices in the skillet.
  6. Stir cornstarch mixture into pan juices.
  7. Simmer 1 minute.
  8. Pour over fillets.
  9. Sprinkle with herbs and serve at once.
