Filet of Flounder With Oyster Sauce

Ingredients:

  • 1/2 tsp white pepper
  • 1/2 tsp black pepper
  • 1/4 tsp dry mustard
  • 1/2 tsp celery seed
  • 1 cup flour
  • 4 flounder fillets
  • 1 cup milk
  • 3 tbsp butter
  • 1 1/2 cups oyster sauce

Directions:

  1. Place spices in mortar and grind together with pestle.
  2. Mix flour with spices.
  3. Dip filets in milk, then dredge in spiced flour.
  4. Heat butter in cast iron pan over medium heat. add filets and cook 3 minutes on each side.
  5. Remove fish and serve with oyster sauce.
