Filet of Fish Stuffed With Spinach and Feta

Ingredients:

Directions:

  1. Heat oil in saucepan.
  2. Add garlic and onion and saute for a minute or two.
  3. Add spinach to pan.
  4. Saute until all water evaporates. About 3 minutes.
  5. Take off heat. Add feta and parmesean. Season with nutmeg, salt and pepper.
  6. Set aside to cool.
  7. Season fish with salt and pepper.
  8. Place about 2 tablespoons of filling onto the center of each piece of fish.
  9. Roll fish aroung stuffing.
  10. Place fish seam side down into baking dish.
  11. Drizzle with olive oil (if desired).
  12. Sprinkle fish with oregano and paprika.
  13. Bake at 400 degrees uncovered for 30 minutes or until fish flakes easily with a fork.
