South American Peanut Pork

Ingredients:

Directions:

  1. Heat Olive Oil over medium heat.
  2. Add garlic onion, bell pepper and carrots (saute 2 minutes).
  3. Add pork, paprika, sugar, cumin& cayenne pepper (salt& pepper to taste).
  4. Brown pork on all sides.
  5. Add chicken stock, scaping the bottom of pan to deglaze it.
  6. Add peanut butter and bring to boil (stirring constantly).
  7. Reduce heat and simmer for 25 minutes.
  8. Serve with rice.
