Ingredients:

Directions:

  1. In a small heavy saucepan, combine the first five ingredients. Cook and stir over medium heat until mixture reaches 160° and is thick enough to coat the back of a spoon.
  2. Remove from the heat. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes.
  3. In a large bowl, combine the pineapple, cantaloupe, grapefruit, oranges, apple and banana. Pour dressing over fruit. Cover and refrigerate for 2 hours.
  4. Just before serving, stir salad. Sprinkle with blueberries. Yield: 10 servings.
