Ingredients:

  • 6 large eggs
  • 6 tbsp plain yogurt
  • 1/2 cup picante sauce

Directions:

  1. Preheat oven to 375°F.
  2. In a blender, whip eggs and yogurt; pour into a pie pan sprayed with non-stick cooking spray.
  3. Bake for 20 minutes, until eggs are set.
  4. Spread picante sauce over eggs and sprinkle with cheese.
  5. Bake until cheese is melted, about 5 minutes.
