Ingredients:

  • 1/2 cup salsa
  • 1 tsp cooking spray

Directions:

  1. Preheat a skillet to medium-low, and spray quickly with the cooking spray. Put both eggs into the skillet and let cook until the bottoms begin to harden and the top bubbles. Using a spatula, push the hard white to the middle of the pan, sliding the uncooked yolk to the edges until it becomes thoroughly cooked. Slide it onto a plate, and top with the salsa, fold over. Enjoy!
