Easy  Sugar Free Coconut Pudding

Ingredients:

  • 6 tsp. splenda
  • 1/4 cup. cornstarch
  • 1 can (14.5 oz.) light coconut milk
  • 3/4 cup. skim milk
  • 1/2 tsp. vanilla
  • 1/4 cup. flaked coconut

Directions:

  1. Mix Splenda and cornstarch in a saucepan.
  2. Gradually add the milks and mix until smooth.
  3. Add remaining ingredients and cook and stir over medium heat until it comes to a boil and thickens.
  4. Spoon into 4 custard cups.
  5. Cover with plastic , prick a few holes on top. This presvents a skin from forming
  6. Chill.
  7. Garnish with fresh fruit if desitred
