Cucumber Relish

Ingredients:

  • 300 ml malt vinegar
  • 3/4 sugar
  • 2 tsp salt
  • add chillies if you want

Directions:

  1. Peel, mince and drain the cucumber (leave draining till the end)
  2. Peel, mince and drain onion (just any main excess juice)
  3. Peel, dice apples
  4. Cook apples with vinegar and sugar and salt until apples are soft and boiling. Simmer. Let it cool right down.
  5. Add onion, mix, add cucumber, mix
  6. Bottle
