Onion Cucumber Salad

Ingredients:

  • 1/4 medium onion
  • 1/4 cup vinegar
  • 1/4 cup water
  • 2 -3 tsp sugar
  • 1/8 tsp salt
  • 1 dash pepper

Directions:

  1. Pull tines of fork firmly down length of cucumber; repeating around cucumber, slice thinly.
  2. Thinly slice onion; separating rings.
  3. Combine remaining ingredients. Pour over vegetables; marinate at least 1 hour.
  4. Drain and arrange vegetables on salad greens.
