Crispy Baked Fish

Ingredients:

  • cooking spray
  • 1 1/4 lbs flounder fillets (4 fillets) or 1 1/4 lbs tilapia fillets (4 fillets)
  • 1/3 cup lemon juice
  • 1 tbsp olive oil
  • 1 tsp olive oil
  • 1/4 tsp salt (to taste)
  • 1/4 tsp pepper (to taste)
  • 1/2 cup breadcrumbs

Directions:

  1. Preheat oven to 500 degrees.
  2. Coat wire rack with cooking spray-place on a baking sheet.
  3. Pat fish dry.
  4. Mix lemon juice, oil, and spices. Dip fish into this mixture, and then into the bread crumbs.
  5. Sprinkle with cheese.
  6. Bake about 10 minutes.
  7. Serve with a sliced lemon.
