Directions:

  1. Combine first 3 ingredients in a small bowl. Stir in mint, if desired.
  2. Spoon pineapple mixture evenly into paper cups. Cover tops of cups with aluminum foil, and insert a wooden stick through foil into center of each cup. Freeze until firm. To serve, remove aluminum foil; peel cup from pop.
