Ingredients:

  • 1 lb. sausage
  • 1 stick real butter
  • 1 large onion chopped
  • 1 doz. eggs
  • 1 8oz. bag of sherdded cheese
  • salt and pepper to taste

Directions:

  1. In dutch oven over fire fry sausage (we always made the sausage the day before at home). Drain grease and remove from pan.
  2. In the same dutch oven add butter, onions, potatoes and green peppers cook till tender.
  3. Add sausage back in dutch oven mixture and cover.
  4. In a large bowl add eggs and mix well. Add this to the dutch oven and mix slow so you don't breake up the potatoes.
  5. When the eggs are done add the cheese to the top cover 3min and serve.
