  1. Heat the butter and saute the onion over medium heat until soft and translucent.Add the cucumber, lettuce, potato, broth,salt,pepper,mustard powder.Simmer until the potato are tender.Blitz in your blender until smooth. Pour into a container and chill in the fridge until nice and cold. Just before serving, stir in the cream and taste test if you need to add more salt or pepper. Garnish with the fresh herbs and a slice of red radish!I like to serve it in cute shooter glasses with the radish hanging on the rim OR in white cups and saucers.
