Cold Cellophane Noodles and Chicken

Ingredients:

Directions:

  1. Boil 3 cups water.
  2. Put noodles in a large bowl and pour over boiling water.
  3. Let sit about 5 minutes, stirring, until noodles feel soft.
  4. Drain and rinse under very cold running water for about 2 minutes, until noodles are cold.
  5. Drain well and place in serving bowl.
  6. In a small bowl, mix sesame oil, soy sauce, vinegar, and ginger.
  7. Pour dressing over the noodles and stir well.
  8. Arrange the chicken on top of the noodles, in the middle; put the carrots and cucumbers around the edges.
  9. Serve cold.
