Claire's Blueberry Oatmeal Muffins

Ingredients:

  • 2 cups flour
  • 1 cup oatmeal
  • 2 tbsp white sugar
  • 4 tsp (rounded) baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup milk
  • 2 eggs

Directions:

  1. Preheat the oven to 350 f. Prepare a muffin tin by spraying the cups or lining with paper liners.
  2. Using an electric mixer, beat the eggs with the brown sugar until very light and the sugar is completely dissolved.
  3. Beat in the applesauce and milk. Set mixture aside
  4. Combine all the dry ingredients, mixing well, then add the raisins to the dry ingredients until well coated
  5. Quickly combine the wet ingredients with the dry using a spatula or wooden spoon. Do not beat or over mix.
  6. Spoon batter evenly into the muffin tin.
  7. Sprinkle granulated sugar on tops.
  8. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
