Citrus (Grapefruit) Vinaigrette

Ingredients:

  • 1/2 cup ruby red grapefruit juice (it may be a blend, and that's ok)
  • 1/2 shallot, minced (may sub 1 tsp dried minced onion)
  • 1/2 tsp dijon mustard
  • 1 tsp sugar
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1 cup olive oil

Directions:

  1. Combine first 7 ingredients in a medium sized mixing bowl.
  2. Slowly whisk in olive oil to produce an emulsification.
  3. Serve with grapefruit sections and avocado slices with fresh spring mix.
