Chicken, Spinach and Rotini Salad

Ingredients:

Directions:

  1. Boil pasta in salted water as directed on the package.
  2. Drain, rinse, drain.
  3. Put pasta in a large bowl.
  4. In a small frying pan, combine the sesame seeds and 1/4 cup of the oil.
  5. Cook over med-low heat until seeds are golden (about 2 minutes).
  6. Remove from heat and let cool.
  7. Stir in remaining oil, soy sauce, vinegar, sugar, salt and pepper.
  8. Pour over the cooked pasta.
  9. Add chicken and toss gently.
  10. Cover and chill for at least 2 hours.
  11. When ready to serve, add parsley, onion and spinach and toss gently.
