Chicken and Cheese Enchiladas

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray a 9x13 baking dish with cooking spray.
  3. In skillet, cook chicken unitl no longer pink and shred (or slice if you prefer).
  4. Return to skillet.
  5. Add salsa and stir.
  6. Add cream cheese. Stir until melted/blended.
  7. Add onion and stir.
  8. Add approximately 1/3 of the shredded cheese and stir.
  9. Add approximately 1/2 cup of the mixture to a tortilla, roll, and place seam side down in baking dish.
  10. Repeat with the rest of the tortillas.
  11. When baking dish is filled, pour enchilada sauce over the top.
  12. Cover with the rest of the shredded cheese.
  13. Bake in oven for 15-20 minutes.
  14. Serve enchilada with a couple tsp of sour cream and shredded lettuce.
