  1. Poach chicken and shred once cool. dice scallions. mix shredded chicken, scallions, salsa and cheese together in a bowl. scoop 1/4 cup of mixture into each tortilla, roll and place seem-side down in a baking dish sprayed with cooking spray. Top with enchilada sauce and bake 30 minutes.
