Ingredients:

  • 1/2 cup of coconut
  • 1/2 cup of butter
  • 1 egg
  • filling
  • 3 8 oz. packages of cream cheese softened
  • 3/4 cup of sugar
  • 1 tsp of vanila extract
  • 1 tbsp of lemon juice
  • 5 eggs
  • topping
  • 2 cups of sour cream
  • 2 tbsp of sugar
  • 1/2 vanilla
  • 1/2 tsp of lemon juice

Directions:

  1. Base: Blend ingredients: press into 13 x 9 x 2 pan.
  2. Filling: Combine ingredients; spread over base.
  3. Bake at 350 degrees for 35 minutes.
  4. Topping: Mix topping, spread over cheesecake, return to oven and bake another 8 minutes.
  5. Garnish with toasted coconut and/or 1/3 cup of chopped pecans.
  6. Chill for 8 hours.
  7. Serves 18.
