Peach and Cream Cheese Pie

Ingredients:

Directions:

  1. Stir together crumbs, cinnamon and brown sugar; stir in melted butter.
  2. Pour crumb mixture into 9-inch pie plate.
  3. Press firmly in bottom and up sides.
  4. Bake at 350F for 15 minutes.
  5. Cool.
  6. Lift peach halves from juices (reserve juices).
  7. Drain.
  8. Arrange, cut sides down, in pie crust.
  9. Beat together till fluffy the cream cheese, sugar, vanilla and 1/4 cup of the peach juice.
  10. Spoon evenly over peach halves.
  11. Sprinkle almonds over top.
  12. Bake at 350F for 35-40 minutes.
  13. Microwave Method: (use a microwave safe pie plate!).
  14. Microwave crust on medium for 4 minutes.
  15. Cool.
  16. Microwave pie on medium for 15-20 minutes till cream cheese mixture looks set.
  17. (Microwave 2-3 minutes longer if needed.) Rotate pie 2 or 3 times while cooking.
