Ingredients:

Directions:

  1. In a large frying pan, heat olive oil over medium heat. Add greens and cook, tossing, until wilted, 1-2 minutes.
  2. Stir in garlic, vinegar, salt and pepper. Cook until greens are just tender, about 1 minute. Remove from heat.
  3. Lay prosciutto slices flat. Place a generous tablespoon of greens at one end of each slice and roll into a tight cylinder, taking care that a bit of green protrudes from each open end.
  4. Serve at room temperature or slightly chilled.
