Prosciutto Wrapped Beets

Ingredients:

  • 1/3 cup goat's cheese
  • 16 slices prosciutto
  • 1 tsp olive oil
  • salt and pepper

Directions:

  1. Pre-heat oven to 350.
  2. In a small mixing bowl toss beets with salt, pepper, and olive oil.
  3. Wrap with foil and bake for 1 hour or until tender.
  4. Allow to cool
  5. Peel and slice into rectangle chunks.
  6. Lay out prosciutto slices.
  7. Add a teaspoon of goat cheese and beet slice at one end of the slice and roll.
  8. Voila!
