Caribbean Shrimp Scallops And Peppers

Ingredients:

Directions:

  1. Heat oil in a skillet with high heat. Add scallops and sear until done on each side. Don't overcook. Put scallops in medium bowl and chill. Quarter scallops when chilled.
  2. Saute shrimp in same pan until shrimp turn pink. Put in another bowl and chill.
  3. Combine marinade ingredients (o. j. through jerk seasoning). Combine shrimp, scallops, veggies and pour marinade over all. Toss gently, cover & refrigerate at least an hour, but I like it done the day before to let the flavors marry nicely.
