Spicy Thai Tofu with Red Bell Peppers and Peanuts

Ingredients:

Directions:

  1. Heat wok with cooking spray over high heat.
  2. Add bell peppers, ginger, and garlic; sauté until peppers just begin to soften, about 2 minutes.
  3. Add tofu and green onions; toss 2 minutes.
  4. Add next 3 ingredients.
  5. Toss to blend, about 1 minute.
  6. Add spinach in 3 additions, tossing until beginning to wilt, about 1 minute for each addition.
  7. Mix in basil.
  8. Season with salt and pepper.
  9. Sprinkle peanuts over.
