Scallops And Shrimp In Lime Vodka Butter Sauce

Ingredients:

Directions:

  1. Squeeze spinach dry, reserve.
  2. Skewer shimp.
  3. Skewer scallops with bacon pieces in between.
  4. In a small sauce pan, heat 1 tablespoon of butter, add onion and garlic, saute briefly.
  5. Add lime juice, vodka, and honey.
  6. Reduce over high heat until syrupy and nearly evaporated.
  7. Whisk in 4 tablespoons of butter.
  8. Reserve.
  9. Quickly heat spinach in remaining butter.
  10. Season spinach with some salt/pepper and a scrape of nutmeg.
  11. Grill over medium heat the scallops and shrimp basting often with sauce until just done and not dried up or over cooked. About 4 minutes one side, two minutes other side.
  12. Put the spinach in the middle of the platter, top with scallops and bacon
  13. Serve shrimp alongside.
  14. Drizzle any remaining sauce over the top.
