Ingredients:

Directions:

  1. Preheat broiler
  2. Cut potatoes lengthwise into quarters
  3. Scoop out 3/4 of the pulp, reserve for another purpose
  4. Place potatoes on broiler pan or baking sheet
  5. Broil 4 inches from heat source for 8 minutes or until golden
  6. Sprinkle potatoes with cheddar, swiss, cayenne pepper, paprika and bacon
  7. Sprinkle with green onions
  8. Broil for 3 minutes or until cheese bubbles
  9. Serve hot with sour cream for dipping
