Ingredients:

  • 2 large eggs
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup milk
  • 1 tsp vanilla

Directions:

  1. In a large mixer bowl,combine all the filling ingredients and blend well.set aside.
  2. Preheat the oven to 300* - in a large bowl, combine the flour, baking powder, and salt.mix well.
  3. Add the melted butter, eggs, milk and vanilla and mix lightly but thoroughly by hand.
  4. Spoon half of the batter into 2 greased 9 pie pans.
  5. Top with the filling, spreading it out with a spoon.but don't mix it in -
  6. Drop the remaining batter on top of filling, by small spoonfuls, spreading it out gently to cover the filling during baking.
  7. It will all come together during baking.
  8. Bake for 1 1/2 hours.cut in wedges serve with fresh fruit and crisp bacon.
