Braised Stuffed Beef Heart

Ingredients:

Directions:

  1. Season meat inside and out with salt and pepper.
  2. Stuff heart with prunes and chopped apple.
  3. Close opening with skewers.
  4. Melt 2 tablespoons of the shortening in a heavy pan with a lid.
  5. Brown meat on all sides,
  6. Remove meat from pan.
  7. Add onion and remaining shortening.
  8. Saute onion until softened.
  9. Return meat to pan.
  10. Add water.
  11. Cover and simmer 1 1/2 hours, or until meat is tender, adding more water if necessary.
  12. Add apple halves to pan.
  13. Cover and simmer 15 minutes, or until tender.
  14. Remove meat and apples to serving plate and keep warm.
  15. Place onion and pan drippings in bowl of food processor and puree.
  16. Place 2 teaspoons jelly in each apple half.
  17. Slice meat across the grain and serve with pureed onion mixture.
  18. Variation: Instead of fruit, stuff heart with fresh parsley.
