Apple Cinnamon Doughnut Buffins

Ingredients:

  • 1 1/2 cups of flour
  • 1/2 cup of sugar
  • 3 tsps of baking soda
  • 1/2 tsp of salt
  • 1 1/2 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1/8 tsp of cloves
  • 1/3 cup of shortening
  • 1 egg
  • 1/3 cup of milk
  • 1/2 cup of grated apple (1 small-medium apple)
  • topping
  • 1/2 cupl melted margarine or butter
  • 2/3 cup of sugar
  • 1 1/2 tsp of cinnamon
  • 1/4 tsp of nutmeg

Directions:

  1. In large bowl mix together dry ingredients and then add your shortening, milk, egg and grated apple.
  2. Mix together all ingredients except the topping, with an electric mixer.
  3. Pour into greased mini muffin pan - filling 2/3 full.
  4. Bake for about 20 minutes till golden brown. Do not underbake or they will crumble when you dip and coat with sugar.
  5. If you use buttermilk they will be even more fluffy in texture.
  6. Remove from muffin pan, cool for a few minutes and then roll the doughnut buffins in a little melted butterfirst and then into the sugar and spice mixture.
  7. Makes about 24 buffins. . These are usually gone at my house before I finish making them, my oldest daughter asks me NOT to make them because she cant stop eating them!
